Big, crunchy oat clusters made with honey, nuts, and seeds, baked low and slow and pressed flat so it holds together instead of falling apart into crumbs.

Ingredients
  

  • 4 cups old-fashioned rolled oats
  • 1 cup raw nuts roughly chopped (almonds, pecans, or walnuts)
  • 1/2 cup raw pumpkin seeds or sunflower seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/2 cup honey or maple syrup
  • 1/3 cup melted coconut oil or avocado oil
  • 1 teaspoon vanilla extract
  • 3/4 cup dried fruit added after baking

Method
 

  1. Preheat oven to 300°F (150°C). Line a rimmed baking sheet with parchment.
  2. Combine oats, nuts, pumpkin seeds, cinnamon, and salt in a large bowl.
  3. Warm honey and oil together; stir in vanilla.
  4. Pour over dry ingredients and stir until evenly coated.
  5. Spread onto the baking sheet and press into a compact, even layer.
  6. Bake 35-40 minutes, rotating and pressing flat again at 20 minutes, until edges are deep golden.
  7. Cool completely on the pan, undisturbed, 30-45 minutes.
  8. Break into clusters and stir in dried fruit.
  9. Store in an airtight container.
