Ingredients
  

  • 1 pound 454g ground beef, 80/20
  • 4 tablespoons 56g unsalted butter, divided
  • 1 medium yellow onion diced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 3 cups 450g peeled, diced Yukon Gold potatoes, about 1 pound (454g)
  • 4 cups 960ml low-sodium chicken broth
  • 1/4 cup 30g all-purpose flour
  • 2 cups 480ml whole milk
  • 2 cups 220g shredded sharp cheddar cheese, freshly grated
  • 1 teaspoon salt plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • Optional: 1/2 cup 120g sour cream
  • Garnish: crumbled cooked bacon diced dill pickle, extra shredded cheddar, sliced green onion

Equipment

  • 1 large pot or Dutch oven
  • 1 whisk
  • 1 small saucepan

Method
 

  1. Brown the beef. In a large pot or Dutch oven over medium heat, cook the ground beef, breaking it into small crumbles with a spoon, for 6 to 8 minutes, until no pink remains and it reaches an internal temperature of 160°F (71°C). Drain off excess fat, transfer the beef to a plate, and set aside.
  2. Sauté the vegetables. In the same pot, melt 2 tablespoons of the butter over medium heat. Add the onion, carrot, and celery, and cook for 5 to 6 minutes, stirring occasionally, until the onion turns translucent and the vegetables start to soften.
  3. Simmer the potatoes. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce to a simmer and cook uncovered for 12 to 15 minutes, until the potatoes are fork-tender.

Notes

Reheats best gently on the stovetop over low heat. Not recommended for freezing once the dairy and cheese have been added.
