Ingredients
  

  • 1 lb 450g flank steak, thinly sliced against the grain
  • 1 tablespoon cornstarch for marinade
  • 1 tablespoon soy sauce for marinade
  • ¼ teaspoon baking soda
  • 3 cups 270g broccoli florets
  • ¾ cup 180ml beef broth
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch for sauce
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 2 tablespoons vegetable oil divided
  • Sesame seeds and sliced green onion optional garnish

Equipment

  • 1 large skillet or wok
  • 1 mixing bowls
  • 1 whisk

Method
 

  1. Toss beef with cornstarch, soy sauce, and baking soda. Marinate 10 minutes.
  2. Blanch broccoli in boiling water for 90 seconds. Drain.
  3. Whisk beef broth, soy sauce, oyster sauce, brown sugar, and cornstarch into a smooth sauce.
  4. Sear beef in batches in 1 tablespoon hot oil, 60–90 seconds per side. Remove from pan.
  5. Cook garlic and ginger in remaining oil, 20–30 seconds.
  6. Return beef and broccoli to the pan, add sauce, and cook 2–3 minutes until thickened.
  7. Garnish and serve immediately over rice.

Notes

Sodium is high due to soy and oyster sauce; use low-sodium soy sauce to reduce it if needed.
